I like this best as a layer cake (as in the picture) so be sure to adjust the recipe as instructed if you want your cake to look the same. Tastes great either way of course.

Blueberry Cake with Light Lemon Icing
Ingredients
- ½ Cup of butter, room temperature
- ¾ Cup of white sugar + 1 tablespoon
- ¼ Teaspoon of salt
- 1 Teaspoon of vanilla extract
- 2 large eggs, separated
- 1½ Cup of all purpose flour + 1 tablespoon
- 1 Teaspoon of baking powder
- ⅓ Cup of milk
- 1½ Cup of fresh or frozen blueberries
- ¾ Cup of cream cheese
- 2 Tablespoon of butter, at room temperature
- 2 Teaspoon of fresh lemon zest
- ½ Teaspoon of vanilla extract
- 2½ Cup of icing sugar
