I am fundamentally opposed to wasting anything in the kitchen. For some reason, wasting any part of an egg – white or yolk – really, really, gets to me. Throwing away multiple egg yolks is an absolute sacrilege in my view.
But this does raise the issue of what to do when you have left over egg yolks.
One or two egg yolks can easily be tossed into scrambled eggs, omelettes or anything else that calls for eggs.
But what do you do with ten or more left-over egg yolks?
While there’s always creme brulee, lemon curd, pastry cream or homemade custard, here are some egg yolk cake recipes that are heavy on the egg yolks.
Gold Cake
Gold Cake is essentially an egg yolk sponge cake. The method is pretty much the same as you would use for an angel food cake. Interestingly, even with a dozen egg yolks, the cake has the same light and delicate texture of it’s more famous airy cousin.
