The cake is sweet and you can definitely taste the cider. For me, this is more a cider cake than an apple cake. Don’t get me wrong, it’s incredibly tasty. Just don’t expect the out-and-out apple hit you get from apple pie or other apple cakes made with fresh apples.
What you do get with this Apple Cider Cake is a sweetly spiced, fluffy cake with nutmeg, cinnamon and vanilla. The caramel glaze is absolutely sensational. Don’t skip the glaze. It transforms an otherwise relatively plain cake into something truly delicious.
And it’s all very easy to make. And even easier to eat. Perfect with a cup of tea.

- 1 cup shortening
- 3 cups granulated sugar
- 6 large eggs
