When serving this cake, a scattering of bright green pistachios and something pink gives a great lift to its presentation. It’s quite a dark cake. I love the edible dried rose petals used in the photo. They add another touch of the exotic but dried cranberries work really well too.

- 320gm brown sugar
- 150 gm unsalted butter, chilled, cubed
