Well now you can with this lovely light vanilla buttermilk cake that is jazzed-up with the addition of chai tea. I love recipes that take something basic like a vanilla cake and add one interesting ingredient which creates something new and exciting. I think Chai Cake is pretty exciting (but as you know, I do get a bit excited over cakes).
Finish your chai cake with a thick vanilla sugar glaze and generous topping of pistachios. I just can’t resist those lovely green nuts!
The recipe calls for a sprinkle of Maldon, Pink Himalyan (or any other light flakey salt) over the pistachios and glaze but including this is up to personal taste.

- ½ tsp vanilla
- ½ cup powdered sugar
- 1 T milk or cream
- ¼ cup shelled, roasted pistachios, roughly chopped
- sprinkle of Maldon, Himalayan Pink {or any other light flaky salt}
