Turns out I was right to be excited. The cake didn’t disappoint. The chocolate cake is beautifully moist thanks to the use of oil, and the caramelised bananas are deliciously gooey and soft without becoming too mushy.

- 2 oz (4 T) butter
- ¼ C + 2 T dark brown sugar, packed
- 2 - 3 ripe bananas
- 1½ C cake flour
- ¾ t baking soda
- ¾ t salt
- ¾ t cinnamon
- ½ C + 2 T cocoa powder
- ½ C + 2 T hot water
- ⅓ C buttermilk at room temperature
- 1½ t vanilla extract
- ¼ C + 2 T canola oil
- ¾ C granulated sugar
- ¾ C dark brown sugar, packed
