Easy Lime Cake

Here we have a beautifully light cake that is spiked with lime for a sparkling fresh flavour. The cake is moist thanks to fruity olive oil and yoghurt.

Another aspect of this lime cake recipe that I absolutely love, is the lime zest sugar used as a topping for the cake. It’s fantastic and  adds a real zing. If you love your citrus flavours as much as I do, this lime zest sugar is great for jazzing up other sweet pleasures. Try it on pancakes!

Easy Lime Cake Recipe

 

Ingredients

For the Lime Cake:

• 1 cup whole full fat Greek yoghurt
• ⅓ cup of olive oil
• 1 cup caster sugar
• zest of one lime
• ¼ cup lime juice
• 2 eggs
• 1¾ cups of sifted plain flour
• 1½ teaspoon baking powder
• ½ teaspoon salt

For the Topping:

• 1 tablespoon lime zest
• 2 tablespoons sugar
